I'd like to build a 2-by cabinet for use with Fender amps. While I know that 12" would produce a "better" sound I'm also considering size and weight for portability. So, would G10C/S be the way to go? And, how far/close do you think 10" would be to 12" in overall sound? I'm not looking to dime the speakers, this would be for a lower volume use in the home for the most part.

Sure.
Let's say I have a Bandmaster head, or Deluxe Reverb head, or have built a Fender amp clone from say Mojotone.
I want a cabinet with (2) 10" speakers, not 12".
What would be the best selection?

Ah ... I LOVE 2x10 ... my Vibrolux is one of my fav amps EVER!

Since you say it's for lower volume, and it sounds like you want to stay in the land of American tone. I'd stick with a pair of Vet10's. They sound excellent in pairs, open or closed-back or anything in-between.

If ya got the cash, a pair of the new G10A's (alnico) would also be superb, at low OR high volumes.

If you DO go in britt land, a pair of ET10's ... but that would be a distant third place in my book.
