2x12 speaker build

I am planning a purchase of a Ceriatone amp and build my own 2X12 speaker cab. What speakers would you recommend for the Ceriatone mini OTS or the OTS 50watt head? Also, if the ohms is say 8, would you recommend series wiring or parallel wiring? If series wireing, what speaker ohm to get the ohm load needed for the amp? If parallel wiring, what speaker ohm to get the ohm load need for the amp?

I am looking for a classic rock, southern rock to bluz tone. Thanks for the info, advice and help on this cab I am building.
Probably a pair ot ET65's (or maybe the new ET90's) if it's open-back.
Pair of Vet 30's if it's closed.
Or, a pair of Reapers (open or closed) ... Or a Reaper & A Vet 30.
